Here’s what you’ll need:
1 large cooked sweet potato
½ cup quinoa flour
½ tbsp. vegetable oil
- Preheat oven to 350°.
- Mix the sweet potato and banana until smooth in a medium sized bowl.
- Add the vegetable oil, then mix in the quinoa flour, continue to mix until blended.
- Place a teaspoon of dough on a non-stick baking sheet. Lightly flatten each cookie on the baking sheet.
- Bake for 30 minutes and let cool before serving.
